Delicious Noms #1

I love a great meal. When I can feel like I also ate something healthy that's even better. Here's an easy healthy recipe for my favorite meal!!! CRAB CAKES!!! I live in Charleston, cut me some slack. I get really excited about crab cakes ;-D.

 2 pounds Crabmeat (*make sure to pick through for shells)
1 Egg, lightly beaten or 1/4 cup Egg Whites
1 tablespoon Lemon Zest
1/2 teaspoon Old Bay Seasoning
1/2 cup Japanese Panko Bread Crumbs, plus extra for outer coating
1/2 cup Plain Greek Yogurt
1/4 cup Fresh Basil, chopped
Non-stick cooking spray or 2 tablespoons of vegetable oil

Combine crab, egg, lemon zest, Old Bay, bread crumbs, yogurt and basil in a large bowl and mix thoroughly.  Form 10 patties out of the crab mixture, and coat both sides with extra breadcrumbs.   Let the patties chill until cold before cooking (30mins-1hour).  Heat skillet using non-stick cooking spray or oil. Sauté the crab cakes, on medium heat,  for 4 minutes on each side or until golden brown .

These amazing crab cakes can be paired with a seasonal salad, put on a bun or my personal favorite, roasted asparagus.

Try this recipe out and let me know what you think. However, I warn you that if you make them, you might not be able to eat crab cakes from a restaurant again!
